Bulgarian cuisine

For Bulgarian cuisine, in simple terms, the three basic ingredients that have been used in food preparation since prehistoric times are unique. It is a white Balkan salty cheese, yoghurt (kiselo mljako) containing lactobacillus bulgaricus, which you will not find anywhere else in the world. Bulgarians consume this yoghurt in various forms every day throughout their lives, and in the end it is čubrica, a plant that commonly grows in Bulgaria. Its properties are similar to oregano. After harvest, it is crushed and used to flavor a large number of dishes as a spice.


Balkan cheese in olive oil
Cut the Balkan cheese into small pieces of about 2x2 cm
Fill the cubes with olive oil
Season with oregano, pepper or pesto.
